  • 1/2 cup cornmeal

  • 1 cup buttermilk
  • Vegetable oil, for frying
  • Lemon wedges, for serving
  • Tartar sauce or marinara sauce, for dipping

Directions

Step 1: Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with a paper towel. Place the calamari in a bowl and pour the buttermilk over them, ensuring they are well-coated. Let them soak for about 10 minutes to tenderize the rings.

Step 2: Mix the Coating
In a large shallow dish, combine the flour, cornmeal, salt, black pepper, and paprika. Mix well to ensure even seasoning. This coating will give the calamari a crispy texture when fried.

Step 3: Coat and Fry the Calamari
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Dredge each calamari ring in the flour mixture, ensuring they are evenly coated. Carefully place the rings into the hot oil, frying in small batches for 2-3 minutes or until golden brown.

Step 4: Drain and Serve
Remove the fried calamari from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil. Serve immediately with lemon wedges and your choice of tartar sauce or marinara sauce.
