Directions

Preheat your oven to 400°F (200°C). Pierce the eggplants with a fork and place them on a baking sheet. Roast for 35 minutes, turning occasionally, until the skin is charred and the flesh is soft.

Allow the roasted eggplants to cool slightly. Once cool, peel off the charred skin and scoop out the softened flesh, discarding any seeds if desired.

Step 3: Blend the ingredients.
In a food processor, combine the eggplant flesh, tahini, lemon juice, minced garlic, and olive oil. Blend until smooth and creamy, adjusting the salt, pepper, and smoked paprika for taste.

Step 4: Adjust consistency.
If the baba ganoush is too thick, add a tablespoon of water or more lemon juice until you reach the desired consistency. The dip should be creamy yet easy to scoop with pita chips.

Step 5: Serve and garnish.
Transfer the baba ganoush to a serving bowl and drizzle with extra olive oil. Top with fresh parsley and pomegranate seeds for a burst of color. Serve with pita chips or fresh veggies.
