Ingredients

  • For the Meatballs:
    • 1 lb ground beef
    • 1/2 cup breadcrumbs
    • 1/4 cup milk
    • 1 egg
    • 2 garlic cloves, minced
    • 1 teaspoon smoked paprika
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons chopped parsley
  • For the Tomato Sauce:
    • 1 tablespoon olive oil
    • 1 small onion, finely chopped
    • 2 garlic cloves, minced
    • 1 can (14 oz) crushed tomatoes
    • 1 teaspoon sugar
    • 1/2 teaspoon dried oregano
    • Salt and pepper to taste

Directions

Step 1
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, minced garlic, smoked paprika, salt, pepper, and chopped parsley. Mix until well combined. Form the mixture into bite-sized meatballs, about 1 inch in diameter, for a perfect, savory appetizer.

Step 2
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally until browned on all sides. Remove the meatballs from the skillet and set aside, leaving the drippings in the pan to enhance the sauce.

Step 3
In the same skillet, add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute. Pour in the crushed tomatoes, sugar, dried oregano, salt, and pepper. Simmer the rich tomato sauce for about 10 minutes, allowing the flavors to meld.

Step 4
Return the meatballs to the skillet with the sauce. Simmer on low heat for 10 minutes until the meatballs are cooked through and the sauce thickens slightly. Serve the Spanish Albondigas Meatballs hot with a side of crusty bread for dipping, making them a satisfying appetizer.
