Prep Time Cook Time Total Time Servings
20 minutes None 20 minutes 8 rolls

Ingredients

  • 8 rice paper wrappers
  • 8 large cooked shrimp, halved lengthwise
  • 1 cup rice vermicelli noodles, cooked and drained
  • 1 cup lettuce leaves, thinly sliced
  • 1/2 cup julienned carrots
  • 1/2 cup cucumber, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • Peanut sauce or hoisin sauce for serving

Directions

Step 1
Prepare all the filling ingredients, including the shrimp, rice noodles, lettuce, carrots, cucumber, and fresh herbs. This will make the assembly process easier and ensure each roll is perfectly balanced.

Step 2
Fill a shallow dish with warm water. Dip a rice paper wrapper into the water for about 5 seconds, just until it becomes pliable. Place the wrapper on a clean, damp surface, like a cutting board or kitchen towel.

Step 3
Arrange 2 shrimp halves in the center of the wrapper, followed by a small handful of rice noodles, lettuce, carrots, cucumber, and a few mint and cilantro leaves. The fresh herbs add a refreshing flavor that complements the shrimp.

Step 4
Fold the sides of the wrapper over the filling, then tightly roll up from the bottom, keeping everything snug. The translucent wrapper should hold the ingredients together, showcasing the colorful layers inside.

Step 5
Serve the fresh spring rolls with a side of peanut sauce or hoisin sauce for dipping. These light and refreshing appetizers are best enjoyed immediately, offering a perfect balance of freshness and crunch.
