  • 1 teaspoon grated ginger
  • 2 garlic cloves, minced
  • 1 egg, beaten (for sealing)
  • Vegetable oil (for frying)
  • Sweet chili sauce for serving

Directions

Step 1: Prepare the vegetable filling.
In a large bowl, combine the shredded cabbage, carrot, bean sprouts, and green onions. Add the soy sauce, sesame oil, grated ginger, and minced garlic. Mix well to ensure the flavors are evenly distributed throughout the filling.

Step 2: Assemble the spring rolls.
Place a spring roll wrapper on a clean surface with one corner facing you. Spoon 2 tablespoons of the vegetable mixture near the corner. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Brush the edges with beaten egg to seal.

Step 3: Heat the oil.
In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop a small piece of wrapper in—it should sizzle immediately.

Step 4: Fry the spring rolls.
Carefully add the spring rolls to the hot oil, frying in batches. Cook for 2-3 minutes per side or until golden-brown and crispy. Use tongs to turn them gently for even frying.

Step 5: Drain and serve.
Remove the crispy spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with sweet chili dipping sauce.
