  • 1 egg yolk
  • 1/2 tsp salt
  • 1 zucchini, thinly sliced
  • 1 sweet potato, thinly sliced
  • 1 bell pepper, cut into strips
  • 8-10 green beans
  • Vegetable oil, for frying
  • Soy sauce or tempura dipping sauce, for serving

Directions

Step 1
In a large bowl, whisk together the flour, egg yolk, and ice-cold sparkling water until just combined. The ice-cold batter is key to achieving a light and crispy texture for the tempura. Be careful not to overmix; a few lumps are okay.
