Ingredients

  • 1 sheet puff pastry, thawed
  • 1/4 cup pesto sauce
  • 1/2 cup Boursin or cream cheese, softened
  • 2 medium zucchinis, thinly sliced into rounds
  • 1 egg, beaten (for egg wash)
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish (optional)

Directions

Step 1
Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface and cut it into 12 strips, about 1.5 inches wide. Spread a thin layer of creamy Boursin cheese on each strip, followed by a light coating of pesto sauce.

Step 2
Place overlapping slices of zucchini along the top edge of each puff pastry strip, leaving the bottom half clear. Fold the bottom edge of the pastry up to enclose the base of the zucchini slices, creating a delicate rosette shape when rolled.

Step 3
Carefully roll up each pastry strip from one end to the other, forming a spiral with the zucchini peeking out from the top. Place each rosette in a muffin tin cup to help maintain its shape. Brush the tops with beaten egg for a golden finish and season lightly with salt and pepper.

Step 4
Bake the Pesto Zucchini Cheese Rosettes for 15-18 minutes, or until the pastry is puffed and golden brown. Allow them to cool for a few minutes before serving. Garnish with fresh basil leaves if desired. Serve warm for the best flavor, letting guests enjoy these savory bites.
